How it is made
Our sparkling wines are obtained directly from the must that has undergone a “prise de mousse” with selected yeasts for a period of one month at controlled temperatures of 12-15° C. This helps to maintain the characteristic freshness of the wine and enhances its aromatic qualities. In the preparation of Valdobbiadene Prosecco Superiore, we use only grapes and musts from the vintage stated on the label. The prise de mousse is stopped by lowering the temperature of the pressurized tank to ensure the desired level of residual sugar.
The area of origin of the grapes used to produce our Prosecco Millesimato is that of the most hilly part of Valdobbiadene, which takes advantage of the best exposures, with ample thermal excursion. The fruit used is very carefully selected and exclusively from the declared vintage. Every year Valdobbiadene Prosecco Superiore may be subject to slight differences dictated by the weather or other phenomena during the growing season.
