Wine dictionary

Tannin: a phenolic substance imparted to the wine by the grape skins. It affects the wine’s structure and color. On the palate it contributes to the body of the wine, sometimes giving a sensation of roughness and astringency that diminishes with age. Tannins can also be imparted by the wood of the barrels or added to wine during vinification
